- 21 Mutton Chops (880 gms) Ribs
- 6 Cups Milk
- 6 Bay leaves
- 5 tbsps Fennel seeds
- 3 tbsps Ginger Powder
- 3 tsp Salt
- 3 tsp Kashmiri LAL Mirch powder
- 3/4-1 Tsp Turmeric powder
- 1/4 tsp Hing
- Garam Masala to be freshly grounded
- 3 Black Cardamoms
- 15 Green Cardamoms
- 3-4 inches stick Cinnamon
- 20-25 Black peppercorns
- 15 Cloves
- 3 Star Anise
- 3 Mace
- For Marination
- 1 cup Plain curd
- 2 tbsp Ginger garlic paste
- as per taste Salt
- 1 Tsp Kashmiri LAL Mirch powder
- 2 Tsp Garam masala (from the above grounded fresh Garam Masala)
- To Fry
- 6-8 tbsps Ghee or as needed
Steps to make to make Kabargah (Kashmiri Mutton Chops)
- Put the milk for boiling on a big kadai or pot. Coarsely Ground the Fennel seeds. Coarsely Ground the Whole Garam Masala also. Keep aside about 2 Tsps for Marination later on. Prepare ginger garlic paste and take 2 tbsps from it. Whisk or blend the curd too.
- Once the milk boils throw in the bay leaves. Then add in the mutton ribs / chops into it, cover and cook till it's tender, while it's cooking add in the fennel powder, Garam masala powder, turmeric, Kashmiri LAL Mirch powder, ginger powder and salt too. Once the milk dries off, let the mutton cool.
- Once cooled, prepare the curd. Whisk and mix the ginger garlic paste, Garam masala, Kashmiri LAL Mirch powder and salt as per taste. Pick up the chops one by one and dip into the curd mix and keep it on the rack till all chops are coated.
- Heat ghee as needed. I add ghee as and when needed. Fry the curd coated mutton chops in ghee till it reaches a nice golden brown color, flipping and frying on both sides. Take the help of a tong. Do it in batches. Serve hot !
